Makhana, also known as fox nuts or lotus seeds, is a highly nutritious and culturally significant food derived from the seeds of the Euryale ferox plant, a type of aquatic plant predominantly grown in the wetlands of Bihar, India, as well as parts of China, Japan, and Korea. The seeds are harvested from ponds or lakes, sun-dried, roasted, and then manually popped to produce the white, puffy edible product known as makhana. It holds a prominent place in traditional Indian diets, especially in Ayurvedic and fasting (vrat) cuisines, due to its light, sattvic (pure) qualities and numerous health benefits.

Makhana is rich in protein, fiber, antioxidants, magnesium, potassium, and iron, while being low in fat and calories, making it a popular choice for weight management and heart health. Its low glycemic index makes it suitable for diabetics, while its gluten-free and non-allergenic properties cater to those with dietary restrictions.
